Overview

The HEI Externship Program is a 14 week fast track development opportunity for culinary students to expand their knowledge in the hotel culinary industry. The Extern will spend their program immersing themselves into the culinary discipline by shadowing critical culinary leaders, gain experience, and apply skills and knowledge developed during their foundational kitchen classes. The objective of this program is to provide you with a foundation that will prepare you for a long-term career in hospitality and culinary industry.

Responsibilities

Shadow identified culinary leaders within the department at the hotel.

Shadow each shift and each position within the Outlet you are assigned to at the hotel.
Assist in setting up plans and actions to correct any food cost problems, control food waste, loss and
usage per HEI Hotels and Resorts standards
Prep and plate up for restaurant and banquets including fabrication of meats, fish, and poultry
Prep and cooking of starches and vegetables
Cook and hold foods saftey and correctly and includes the plate up.
Ensure compliance with Standard Operating Procedures and Policies.
Comply with attendance rules and be available to work on a regular basis.
Perform any other job related duties as assigned.

Qualifications

Current student or recent graduate of a culinary arts program.
Ability to establish and maintain effective working relationships with associates, customers and patrons.
Ability to stand for long periods of time with or without reasonable accommodation.
Effective verbal and written communication skills.
Ability to adapt communication style to suit different audiences, such as effectively communicating with supervisors, coworkers, public, etc.
